Cooking Schedule Management

(Maitre'D 2002, from Service Pack 9 and later versions of Maitre'D)
The Inventory module option from the Maitre'D Desktop allows you basically to perform the full management of your inventory. In order to access this module, just click on the Inventory icon from the Back-Office screen or from within the module you are located if the option Toolbar is selected under the View menu.

Cooking Schedule Overview

As part of the Inventory module, the MAITRE'D system can help you in planning your cooking schedule. This feature is especially helpful for items that require a longer cooking time by letting you prepare these items in advance. By default, the system looks at your sales for such items on the same day a week ago, and assumes that you will sell approximately the same number of items at approximately the same time that day. The system also takes into account the number of these items actually sold today, so as to not have you pre-cook to many of them.

Cooking Schedule Start Up

The following document describes how to use the database in Inventory Management with the Cooking Schedule. Prior to setting up the Cooking Schedule, it is important to have setup the Inventory Items, as well as all other settings and necessary components essential to the creation of Inventory Items.

Inventory Management / View / Options / Cooking Schedule

The Cooking Schedule setup allows you choose up to 10 Items to be tracked.

Tracked Items:

Name of tracked items.

Projection time in hours:

Projection time in hours of a tracked item.


Select this option to start tracking an item.


Select this option to modify the projection time in hours of a tracked item.


Select this option to stop tracking an item.

Start Display Hour:

Select from the list the first hour you want displayed on your cooking schedule.

End Display Hour:

Select from the list the last hour you want displayed on your cooking schedule.


Select this option to refresh the XML tracking file. This file contains the sold quantity of your tracked items by time slices in the last 7 days.

Item to track:

Select the inventory item that you wish to track.

Time Projection:

Select the projection time in hours for that tracked item.
For example, if you need 3 hours to thaw and marinate and cook this item, your will select a time projection of 3 hours, so that if your sales curve matches the sales curve of 7 days ago, you will have plenty of time to prepare the number of items that you will probably need today.

Inventory Management / Planning / Cooking Schedule

The cooking schedule option can be used to plan the quantity of key items to cook throughout the day. The computer will estimate the needed products according to your sales of the same day last week and print a report if requested.
This function will not do any inventory posting; it will only help you to schedule your work.

Time:

Hour slice.
Current

Sold / Hour:

Quantity sold in that time slice today.

Total:

Total quantity sold from midnight until that hour today.
Previous

Sold / Hour:

Quantity sold in that time slice 7 days ago.

Total:

Total quantity sold from midnight until that hour 7 days ago.

Var / Hour:

Difference between quantities sold in that time slice today and 7 days ago.

Var / Day:

Difference between total quantity sold from midnight until that hour today and 7 days ago.

Projection (Xh):

Projected quantity needed in the next X hours.

On Hand:

On hand quantity.

Cook:

Quantity to cook so as to avoid running out according to variation between today and 7 days ago.

Select this option to manually change the On Hand quantity.

Print

Click this button to print the cooking schedule, starting with Maitre'D 7.04.021.003

Note: In Maitre'D 2002 and 2003, you can print it by right-clicking on the schedule and choosing Print from the contextual menu.

New On Hand Quantity:

Enter an adjustment of your on hand quantity.

Auto:

Set this option if you want the system to assume the on hand quantity matches the projection.
For example, if the tracked item is chicken, and that you constantly keep your rotisserie oven full of chicken, you would set this option to Auto.

XML Files

Description

4 XML files, located in the Data folder, are used for cooking schedule management.

itemTrackSetup.xml

Contains the cooking schedule selected items to track a projection times.

TrkHistory.xml

Contains quantity sold of tracked items by time slices in the last 7 days.

rtitmtrak.xml

Contains quantity sold of tracked items by time slices today.

rtitmmanual.xml

Contains adjustments of your on hand quantities today.
