Maitre'D can calculate the exchange rate so that the highest possible amount
of paper change is given back to the guest in the foreign currency, and
only the coin change is given back in local currency.

The Amount Due is displayed in the Foreign Currency.
Enter the money received in the Foreign Currency.
The paper change in foreign currency plus the coin change in local currency
are both displayed large and bold, along with the numbers used for the
calculation in smaller font.
Note: In this example, in Canada, a $10.00 bill in foreign US currency
was handed in by the guest for a $5.13 check. But since the check is actually
worth only $3.42 US, $4.00 US would have been enough to cover it. Therefore,
$6.00 US bills are handed back to the guest. The remaining $4.00 US are
worth $6.00 Canadian, and the amount due is $5.13, so $0.87 Canadian is
also handed back to the guest.
